Fall Soup

Making a different version of the white bean and ham soup today.
It’s a little chilly today in the Seattle area and soup sounded like the perfect dinner option.

1 Cup of dried small white beans
1 hamhock
1 onion
4 stalks of celery
1 carrot
Salt and spices to taste. I used dried thyme and a little cayenne pepper. Don’t over salt since it cooks for a long time.

Simmer hamhock for a couple of hours until tender
Cover beans with water to soak (3 hours should be good)

I used all but 2 cups of the ham stock. Pull out hamhock to cut off meat.
Chop onion, celery and carrot and add to stock.
Chop ham and add to stock
Add beans
Season
I put the largest bone back in the pot to enhance flavor
Cook for about 3 hours at least
