Photo is the stew in process.
I used a pork roast intended for the crock pot, pre-seasoned.
Cut 2.5 pound roast in half and cover with water. Simmer for 2 hours until tender. Retain water.
Cut 1 yellow onion, diced large
4 cloves garlic, chopped
Add to pot and cook on medium heat for 10 minutes
Cube 2 medium sweet potatoes, add to pot
1 cut red potato
2 teaspoons ground cumin
1/2 teaspoon ground Chipotle
1/2 teaspoon salt
Cube pork add to pot
Add retained pork cooking water
Add fresh cilantro leaves to taste
Add juice of 1/2 lime
Add chicken broth about 1 cup, add additional after cooking for a few hours if needed
Cook for 4 hours total on stove top, medium low heat.
