Potato Leek Soup

So cold here today! I woke up to 24F. Freezing house. Time to make soup!

1 leek, cut in half and sliced
1/2 carrot, chopped
1 stalk celery, chopped
2 cloves garlic, minced

Saute on medium heat in EVOO until wilted (about 10 minutes)

Add about 10 small Yukon Gold potatoes, diced with skins on

Add enough chicken stock to cover (about 20 ounces)

Add 1/4 teaspoon dried thyme
Add 1 teaspoon salt
Add pepper to taste

Bring to boil, reduce heat to medium low and cover

This should cook until potatoes are tender and veggies are cooked down. As my brother would say, “is it getting happy?” I cooked about 1 hour.

To finish you can add some half and half to make it creamier or eat it as is. Maybe 1/2 – 1 Cup.

Pro tip: don’t dump cream into pot directly. Remove some of the hot soup into a bowl. Mix cream into soup THEN add that a little at a time to pot of soup. Add additional cream as desired.
