Easy meal to make.
Brown 3/4 pound of ground beef
Cook 1 Cup dry of Jasmin rice (I always make more than I need. This will yield about 2 cups cooked rice)
When beef is cooked add:
1 can pinto beans 15 oz
1 can black beans 15 oz
1 can RoTel Diced Tomatoes and Green Chilies 10 oz
Simmer until rice is cooked. Add 1 Cup rice, mix well. Add 1/2 shredded cheddar cheese. Stir well again.
Top with more cheese and a dollop of sour cream when serving.
