So this is what I had to work with – nothing fancy cooking for sure.
1 1/2 pounds chicken thighs
1 Cup Jasmine rice
1 jar Indian simmer sauce, Goan Coconut
Cook thighs on medium heat until no pink
In same pot add 1 cup water and simmer sauce. Bring to a boil.
Add uncooked rice and stir.
Reduce heat to low, cover and cook for 25 minutes.
Super easy, fast, one-pot meal.
